Italian Meatballs Bolognese

Sometimes a big fat spicy meatball just hits the spot. Classic bolognese sauce with anchovy & lotsa fresh garlic simmered for a couple hours ... then I added the meatballs spiced up with red pepper flakes & green onions/herbs, eggs, breadcrumbs and parmesan cheese & simmered some more. Sided up with a big green salad & garlic toast ~ Mama Mia, dat's Italian!

Kansas Backroads In The Fall

Went for a cruise out into the boonies yesterday ~ took the backroads to my favorite fishing hole ... had my poles with me but never wet a line ~ just enjoyed the beautiful weather and scenery.

Flat Iron Steak Quesadillas

Tasty steak quesadillas topped with homemade black bean/corn salsa made with homegrown tomatoes, garden fresh onions, sweet corn, jalapenos and serranos ~ all from the Perrydize garden.

Tillamook cheddar & thin sliced flatiron steak tossed in hot sauce.

Sliced mixed homemade pickled peppers and more cheddar.

Toasted in hot skillet & cut into wedges.

These gameday snackins got scarfed down lickety split.

ABT Omelette W/Smoked Sausage

Smoked homemade brisket/serrano sausage, home fried yukon gold 'taters & onions and a fluffy 4-egg omelette stuffed with chopped ABTs & cheddar ~ topped with a few more chopped ABTs.

Smoked sausage and ABTs ~ great snackins for football watchin' on a Saturday afternoon. Gonna use a few them ABTs to make an omelette this morning, too. Serranos from the Perrydize garden.

What ... I LIKE veggies, so sue me! Thinkin' I might make some garlic toast wit dat fresh baked bread, too. God Bless America!

Chicken Pot Pie

Mais, I went all foo foo and lattice like on the biscuit topping for this chicken pot pie ~ even put some parmesan cheese in the biscuit dough (Lord, I apologize for that ... and be wit them starving pygmies down there in New Guinea)

Here's what underneath dat foo foo biscuit topping ~ nice thick savory homemade chicken stew wit lotsa fresh veggies & chunks of slow-stewed chicken.

Well, I had the oven cranked up so I hauled off and baked a few soft, chewy peanut butter/oatmeal cookies too.

Sunday Breakfast On Da Bayou

Fluffy green chile queso omelette, fried caramelized onion grits, crisp bacon ~ washed down wit a virgin bloody.

Caramelized onion/cheddar grits, chilled overnight ~ sliced & dredged in flour/yellow cornmeal & fried in bacon drippins.

Oh Yeah ~ dat's what I'm tawkin' about.

We don't need no steenkin' Egg McGriddle, no!

I've been very blessed over the years to have many good friends, and most of them are talented musicians. I have no idea why these talented people let me hang around with them, because I cain't carry a tune in a bucket ~ but in any case, this is the weekend of the great Walnut Valley Festival (know simply as Winfield to us) and it got me to thinking about some of the good times I've had with these folks above. Crunky Breakfast Biscuits

Mais, I got lost at the groceria this morning ~ hadn't had mah cawfee yet & was looking fer something quick for breakfast ... found mahself in the canned meat isle & spied a can of bacon SPAM ... dat's right, bacon-studded SPAM. Now, how's a bubba like me gonna pass that up, huhhh?? Came home and fried it up and slapped it on a scratch buttermilk cathead wit a splash of Tabasco and a drizzle of homemade blackberry jam. It was so gawdawful I ate 3 of them. Now ... it's time to crack a beer and settle in for an afternoon of NFL action.
